Carbonic maceration Grolleau Noir from organic vineyards

The talented duo Clarisse Godet and Benjamin Louf met whilst studying oenology and viticulture. Together they bring in 10 years of experience from around the world, including France, Australia, New Zealand, Canada and Chile. It was in 2021 that they decided to create their own domaine. They started by working with abandoned vines of Chenin Blanc in the appellation of Touraine Azay-le-Rideau. Today, they manage 4.5ha of land, planted with Chenin Blanc, Sauvignon Blanc and Grolleau Noir. In the cellar, all their wines are fermented with native yeasts, with no additions or filtration takes place.

The Grolleau grapes undergo a rather short (10 days) carbonic maceration in stainless steel tanks. This is to preserve the variety’s freshness and fruity character. Once pressed it returns to tank for approximately 6 months before bottling. Nothing taken away and nothing added.
Beautiful raspberry fruit, lends to tones of rose and peppery spice. Elegant and fragrant with a gentle bite on the finish.
