“Les Volets” translates to “shutters” – the kind of window shutter you’ll find on almost every house in the south of France. As the shutters are absolutely typical of the villages of the Haute Vallée de l’Aude, so too are these wines completely expressive of the region

Pinched between the Atlantic and the Mediterranean is the Haute Vallée de L’Aude. The traditional ‘noble’ grape varieties of Chardonnay and Pinot Noir have a natural affinity here. Both varieties benefit from the warm climate combined with high altitude, allowing for slower and longer ripening of the grapes. These ideal growing conditions gives this wine concentrated fruit yet refreshing acidity. Made from mostly hand-picked grapes, which are are fermented in stainless steel with a touch of oak adding texture and complexity.
